Aunty Alfta's Adventures In Northern Cooking
Aunty Alfta's Chicken and Leek Soup

This is a favorite of Aunty Alfta's. It is not only delicious but very nutritious as well. This also makes perfect filling for Chicken Pot Pies, another of Aunty Alfta's favorites. Enough talk from me, on to the ingredients.

Ingredients:
3 T. - Butter
3 - Leeks
5 - Medium Potatoes
2 - Carrots
1/2 c. - spinach
2 - Celery Stalks
1 c. - green peas
1/4 c. - flour
4 - cups chicken broth
2 - egg yolks slightly beaten
1 t. - salt
1/4 t. - pepper.
4 full chicken breasts cubed

Start off first thing making your chicken broth. Aunty Alfta prefers Herb-ox brand chicken broth cubes. They make the tastiest chicken broth you ever tasted! Peel the taters an prepare the leeks. Be sure to prepare the leeks properly! Slice the taters, carrots, leeks (substitute onions for leeks if you don't have any leeks) and celery and add them into the pot with the three table spoons of butter. Cook them for about 15 minutes stirring well every 5 minutes.

Next add the peas, spinach, salt, pepper and chicken. You can cook the chicken before adding to the soup if you like which makes it easy to slice up. Add the flour while stirring. Once the flour is stirred in well add the chicken broth while stirring. Stir well. Let cook for about 30 minutes or until the carrots and potatoes are soft. Once they are soft slowly pour in the egg yolks while stirring. Let simmer and you are ready for some good eating!
