Aunty Alfta's Chicken and Leek Pot Pie

Wooooo boy does Aunty Alfta like Chicken and Leek Pot Pie! And it is really easy to make too! First you'll nee to make some of Aunty Alfta's Chicken and Leek Soup. Aunty Alfta usually makes a big ole bunch of it and freezes most of it for later. You'll also need to make two pie crust dough's.This is for a pie that is made in a normal pie pan, 1.5 inches deep and about 10 inches in diameter so you'll have to adjust your portions depending on what kind of pan you use for your pot pie.

Smear the pan bottom and sides liberally with butter. Lay your first pie crust dough in the pan and position it so that it covers the whole bottom and sides of the pan.

Preheat your oven to 350 degrees and put the pan with only the bottom crust in to bake for about 10-15 minutes.

Take the pan back out and pour in the chicken and leek soup filling until the pan is almost full.

Take the second pie crust and lay it over the top and flute the edges. Be careful you don't burn your finger tips!! Aunty Alfta likes to carve a hammer or other symbol into the middle of the crust before putting it in oven. A pie of this size will take about 50 minutes to bake. If you are cooking smaller pies it may take a little less time. Mmmmm good!
